kitchen basics - self-made pesto

For a traditional Pesto Genovese, which exists in Genova and Liguria for over 200 years, you need just 7 ingredients: basil, pine seed, olive oil, garlic, parmigiano reggiano, pecorino and salt.


You need:

200 g basil 
3 tbsp pine seeds 
3 cloves of garlic
50 g parmesan cheese 
50 g pecorino cheese
sea salt
100 ml good olive oil

1. roast pine seeds in a dry frying pan without any oil. Chop the garlic coarsely and grind the parmesan and pecorino cheese.
2. put the garlic together with the sea salt in a mortar and crush together. Add the pine seeds and the basil leaves in small portions and continue. Finally add the cheeses.
3. put the paste into a bowl and stir in as much olive oil as needed to get a smooth, but slightly chunky paste.
